Key Lime Tart


Key lime tarts are a delicious and tangy dessert made with key limes, a variety of limes that are smaller and more aromatic than the typical Persian limes. These tarts are popular in the United States, particularly in the Florida Keys, where key limes are abundant and have given the dessert its name. Key lime tarts are known for their sweet and tart flavor, as well as their creamy and smooth filling that is both decadent and refreshing, perfect for any season. If key limes are not readily available, Persian limes, also known as regular super market limes also work perfectly.

Ingredients (10 total):

Crust:

7 oz Biscoff cookies

2 tbsp sugar

Pinch of kosher salt

4 tbsp butter (melted)

Filling:

1 can condensed milk (14 oz can)

3/4 cup freshly squeezed key limes or Persian Limes (6-8limes)

1/4 cup sugar

5 egg yolks

 Garnish:

1 cup heavy cream

2 tbsp sugar

2 key limes (thinly sliced)

3-4 sprigs of mint

Tools:

food processor

9 inch tart pan

Hand mixer

Piping bag (or sandwich bag)

 

Method:

  1. Crust: Preheat oven to 350 °F/176°C. In a food processor, combine Biscoff cookies, sugar, and salt and blend until fine. Add melted butter and pulse until combined. Transfer mixture to tart pan and use a flat cup bottom to press mixture down evenly on the bottom and up sides. Bake crust for 15 minutes until slightly colored. Set aside to cool for 10 minutes.

  2. Filling: In a bowl, combine condensed milk, key lime juice, sugar, and egg yolks. Pour filling mixture into tart pan and back for 25 minutes until filling on outer edge is firm but the center is slightly loose. Set aside to cool completely, then refrigerate tart for 3 hours.

  3. Garnish: In a small bowl, whip cold heavy cream and sugar with hand mixer until completely whipped (about 2 minutes). Transfer whipped cream into piping bag. Garnish tart with lime slices, mint, and whipped cream.

  4. Serve: Consume immediately after refrigeration, with additional whipped cream, and coffee or tea!
