Pistachio Panna Cotta

Chilling time: 4 hours or overnight

 

Ingredients:

1/2 cup raw pistachios (shelled)

1 cup heavy cream

1/2 cup milk

3 tbsp sugar

1/2 packet unflavored gelatin powder

 

Tools:

small food processor

small pot

4 small 1/2 cup bowls

Method:

  1. Make Pistachio Paste: In a small food processor, blend pistachios until finely ground. Slowly add 1 tbsp of water at a time until a thick paste forms (about 1-2 tbsp of water). Place into small bowl and set aside.

  2. Boil Panna Cotta: In a small bowl, mix 1 tbsp water and gelatin powder and rest for 5 minutes. In a small pot on medium low heat, combine pistachio paste, heavy cream, milk, sugar and mix until combined. Bring mixture to a low simmer, then mix in gelatin mixture until completed melted. Turn off heat and pour mixture into 4 small bowls.

  3. Chill and Serve: Chill bowls for 4 hours before serving. Garnish with chopped or ground pistachios or fruit.
