Pistachio Panna Cotta
Method:
Make Pistachio Paste: In a small food processor, blend pistachios until finely ground. Slowly add 1 tbsp of water at a time until a thick paste forms (about 1-2 tbsp of water). Place into small bowl and set aside.
Boil Panna Cotta: In a small bowl, mix 1 tbsp water and gelatin powder and rest for 5 minutes. In a small pot on medium low heat, combine pistachio paste, heavy cream, milk, sugar and mix until combined. Bring mixture to a low simmer, then mix in gelatin mixture until completed melted. Turn off heat and pour mixture into 4 small bowls.
Chill and Serve: Chill bowls for 4 hours before serving. Garnish with chopped or ground pistachios or fruit.
