Roasted Garlic Bread
Roasted garlic bread is a delicious and flavorful dish that can easily be the star of the show when done right. It is made by roasting garlic cloves until they are richly caramelized and the mixed with good quality butter, fresh parsley, flaky sea salt, and fresh cracked pepper to create a densely rich, savory, and umami filled compound butter that is then spread over bread, baked until hot and crispy on the outside but soft on the inside with luscious buttery garlic goodness.

Ingredients:
Garlic Butter:
7 heads garlic (roughly 70 cloves)
1/3 cup olive oil
8oz Kerrygold unsalted butter (1 block) (at room temp)
2 tbsp parsley (finely chopped)
flaky sea salt
1/2 tsp freshly cracked pepper
Bread Assembly:
1 loaf Ciabatta or French baguette bread
1/2 cup freshly grated parmesan cheese
1 tbsp parsley (finely chopped)
freshly cracked black pepper
flaky sea salt

Method:
Roast Garlic: Preheat oven to 375°F/190°C. Peel heads of garlic, place in small baking dish and cover with olive oil until garlic is completely submerged. Roast garlic for 1 hour until brown but not burnt. Strain garlic from oil. Save garlic oil for other dishes!
Make Garlic Butter: In a mixing bowl, mash roasted garlic until almost smooth. Mix in room temp butter and chopped parsley. Lightly season with salt and fresh black pepper to taste.
Garlic Bread: Preheat oven to 375°F/190°C. Slice bread lengthwise, spread garlic butter over bread, sprinkle with half of the grated parmesan cheese, flaky sea salt and freshly cracked black pepper. Bake for 10-15 minutes until butter is thoroughly melted and outside crust is crisp but bread center is still soft.
Serve: Garnish with rest of parmesan cheese and chopped parsley and enjoy!
Leftover Garlic Butter: Roll into a log with parchment paper and refrigerate for up to a month for freeze for 3 months.
